  * ½ cup jasmine rice (or japanese sticky rice)&lt;br /&gt;   * 80g tuna in olive oil (about half a can)&lt;br /&gt;   * nori seaweed&lt;br /&gt;   * dried shiitake mushrooms&lt;br /&gt;   * dashi/chicken/vegetable stock&lt;br /&gt;   * black pepper to taste&lt;br /&gt;   * ½ teaspoon sesame oil, or to taste&lt;br /&gt;   * soy sauce to taste (optional)&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;SEAWEED SALAD RECIPE INSTRUCTIONS&lt;/span&gt;&lt;br /&gt;  1.soak the shiitake mushrooms for at least 10 minutes to soften them. cut them into slices.&lt;br /&gt;  2.wash &amp;amp; cook the rice, shiitake mushrooms, and seaweed in the dashi/stock. i usually just throw everything into the rice cooker, adjusting the amount of water/stock accordingly.&lt;br /&gt;  3.when the rice is done, heat the tuna chunks up. i use the microwave for this. season with black pepper.&lt;br /&gt;  4.flake tuna chunks into the rice/mushrooms/seaweed mix. give everything a good stir &amp;amp; Nice !&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;      1 c  dried hijiki&lt;span style="font-weight: bold;"&gt; seaweed&lt;/span&gt;&lt;/li&gt;&lt;li&gt;      1    or substitute wakame&lt;/li&gt;&lt;li&gt;      2 tb rice wine vinegar&lt;/li&gt;&lt;li&gt;      2 ts sesame oil&lt;/li&gt;&lt;li&gt;      2 tb sliced scallion greens&lt;/li&gt;&lt;li&gt;      1 ts sugar&lt;/li&gt;&lt;li&gt;      1    salt and white pepper; to-taste&lt;/li&gt;&lt;li&gt;      1 c  cucumber; peeled&lt;/li&gt;&lt;li&gt;      1    seeded and finely diced&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;Instructions&lt;br /&gt;&lt;br /&gt;In a bowl, pour warm water over seaweed and soak for 30 minutes, or until&lt;br /&gt;soft. Boiling hot water will leak out too much flavor. Drain the &lt;span style="font-weight: bold;"&gt;seaweed&lt;/span&gt; well. Mix all other ingredients and toss with the &lt;span style="font-weight: bold;"&gt;seaweed&lt;/span&gt; and cucumber.&lt;br /&gt;Check for seasoning. Heat to dissolve the honey and mix the dressing well. Remove from heat and chill.&lt;br /&gt;&lt;br /&gt;Seed the cucumber with a spoon. Then cut the cuke into paper-thin slices. Put the slices in a bowl of cold water to cover; add salt. Soak for 20 minutes. Soak the wakame for 10 minutes, and the arame and hijiki for 30 minutes&lt;br /&gt;2. Cut the scallions into 4cm long strips and soak them in cold water to make them curl up, then drain.&lt;br /&gt;3. slice the cucumber into thin half-moon shapes.&lt;br /&gt;4. Cook the wakame and enoki in boiling water for 2 minutes, add the arame and hijiki&lt;span style="font-weight: bold;"&gt; seaweed &lt;/span&gt; for a few secinds then remove them immediately. Drain and marinate with vinegar and salt, then chill in the refrigerator.&lt;br /&gt;5. Mix the dressing ingredients.&lt;br /&gt;6. English, Japanese or even Lebanese cucumbers are a great choice.&lt;br /&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Preparation Wakame / &lt;span style="font-weight: bold;"&gt;Seaweed&lt;/span&gt; : Soak in warm water for about 6 or 7 minutes. Drain and cut off strings. Place the seaweed in boiled water and then a bowl of cold water. This will make it a beautiful emerald green color.&lt;br /&gt;Cucumber: Sprinkle some sea salt on a cutting board. Roll cucumber in the salt.
